
Down here in New Orleans, we have adopted a whole new meaning for the word "trinity." If you don't capitalize the word, everybody down here knows you're cooking with onions, bell pepper and celery. That's the trinity and every good cook in south Louisiana understands it is the beginnings of many a fine dish.
Depending on how many people you are feeding, the trinity is equal amounts of onion and celery and half that amount of bell pepper.
So if you're cooking with 1 cup of celery, 1 cup of onion, you add a 1/2 cup of bell pepper, and there you have the trinity.
